It had been than a year I have left Memphis, TN, US back to my country, Thailand.
How's wonderful during 3 months up there, non-stop of Thai food cooking!
Thank you Home2 Suites by Hilton Memphis-Southaven, a nice and friendly place to stay whole period of time in US.
The facility to provide me possibility to cook (and one day smoke detector was rang inside my room from my own cook...haha..).
The provided skillets, table top stove and microwave, I was very enjoyed my cooking there.
For a year as well, I didn't cook a favorite menu on my own call "Kai Thom Nam Pra" (boiled chicken in fish-sauce). To be honest, in my country it's very easy to find ready meal from the street markets where the taste and price are always right.
I start with this menu cooked picture last year when I was in US.
Just believe the picture was really at US! All ingredients found at Walmart except the chili in bowl, I bought it from a farmer market.
Come today to re-run a cooking of boiled chicken in fish sauce.
1. Pieces of chicken and ... yeah... as you see the chicken feet and its mixed giblets total of weight is about 2 kgs (1 pound roughly).
2. Cilantro leaves and their root, garlic (2 roots), 2 table spoons of fish-sauce, thin soya sauce and sugar.
3. Big pot being able to hold all above, put in water for half of the pot.
4. Mix everything into pot, turn on your stove and just leave it for about 2 hours (you can see when the water is just dropped by half and it's become a little bit thick). Your cook is ready!
5. Serve with rice and spicy dip (seafood spicy dip recipe was posted on August 23, 2016).
