Papaya Salad (Som Tum)
One of a famous and favorite Thai exotic menu is "Som Tum" or "Papaya salad".
It's a mixture menu with different favorite ingredients into the slice pieces of raw papaya.
Som Tum this time I cooked was a very exotic one we call "Som Tum Pra Ra"
Pra Ra in Thai means the fermented fishes, salty favor.
Not only Thailand we do have this type of fermented fishes also the neighbor countries like Laos, Cambodia amd Burma.
The fishes which are very good for Papaya Salad to those small once we call "Pra Gra Dii fish.
I take another post later to tell more exotic recipe from Pra Ra.
Let's cook!
1. You put together about 3 pieces of garlic with 4-5 bird chili into the mortal, pound them with pestle not have to be in a very small pieces. Remember that as much small pieces of broken garlic and chili as much spicy you get.
2. Add in 2 lime pieces (you squeeze the juice into then follow by its shell), 1 tomato cut into 4-5 pieces, 2 table spoons of fish sauce and tamarind juice, 2 tea spoons of palm sugar and Pra Ra.
3. Mix all together, you're getting now very exotic Som Tum Tra Ra salad dressing!
- If you don't want to serve the meal now, you can keep this sauce in refrigerator until then later you can mix the papaya.
4. About one time hand to pick up papaya, mix them together. Som Tum Pra Ra is now ready for serve.
- Normally, we will have Som Tun and sticky rice as a side dish but I didn't have it this time and still enjoyed.
- Sticky rice with Som Tum is different from another kind of sticky rice we eat with mango. That type we eat with mango is a sticky rice mixed with coconut milk and sugar.
Here are my picture collection of Som Tum Pra Ra I had just for 3 days continuously last week!
I love them.
Before we see again, just proud to present these ate the papaya taken from my garden.
If you want to secure the crispy and fresh, having them on salad - - you get to take it into pieces before its latex was dried off.
Dad taught me that, if you hand get in itchy from the papaya latex - - rub your hand with raw grain. It helps to reduce annoy.

Thai dinner at HOME2 Memphis Southaven
I start with a song to describe "Memphis", walking in Memphis.
It had been a good memory to stay, spend time and walk in Memphis. I couldn't believe I will be very far off Thailand to the pleasant place. The legend place of rock and roll super star, Elvis Presley.
People was kind, giving me a hospitality even some may try to understand where was Thailand or probably it's a country closed to Taiwan. I love you anyway.
Last weekend before I packed my bags homed, I arranged Thai dinner with my 2 beautiful friends and their husbands. It's so exciting to cook some kind of Thai food in a hotel room for 5 people. I made it with no alarm from smoke detector!
Menu there were, Chicken green curry with Thai egg plants, Glass Noddle Pad Thai, Fried pork with I-san sauce, Stir cabbage, rice and Thai tea!
Unfortunately, I missed out the high light menu's pictures which my girl friends loved very much. It's green curry!
Definitely, I will do list out how to cook each menu presented here. Keep in touch.

Thai tea or Red tea
The easy beverage at summer time like today weather in Thailand, I'm proud to recommend you a Thai tea on ice.
My American friend call it a "red tea" perhaps because of its color looked likely red.

Picture above was Thai tea we found in Asian market. Taste is right but price was very expensive!
Simple way to make Thai tea beverage is just sweet with ice or just sweet with condensed milk and ice.
Let's start...
1. A recipe just with sugar and ices (you can add in some lime)
- 1 table spoon of dried Thai tea, 4 table spoons of sugar, 1 cup of hot water, 1-2 slide piece of lime
- Put the water through the dried tea (using the colander as a filter to get the water through the tea)
- Add in sugar
- Prepare ices in glass decorate by a slice piece of lime
- Put on ice the tea water
2. A recipe with condensed milk and ice
- 1 table spoon of dried Thai tea, 2 table spoons of sugar, 2 table spoons of condensed milk and a cup of hot water
- Put the water through the dried tea (using the colander as a filter to get the water through the tea)
- Add in sugar and condensed milk, get them mixed together
- Prepare ices in glass
- Put on ice the mixed tea water
- You can add in fresh milk on top to get more taste of milk
Enjoy your glass of Thai tea in summer time.

Boiled chicken in fish-sauce
It had been than a year I have left Memphis, TN, US back to my country, Thailand.
How's wonderful during 3 months up there, non-stop of Thai food cooking!
Thank you Home2 Suites by Hilton Memphis-Southaven, a nice and friendly place to stay whole period of time in US.
The facility to provide me possibility to cook (and one day smoke detector was rang inside my room from my own cook...haha..).
The provided skillets, table top stove and microwave, I was very enjoyed my cooking there.
For a year as well, I didn't cook a favorite menu on my own call "Kai Thom Nam Pra" (boiled chicken in fish-sauce). To be honest, in my country it's very easy to find ready meal from the street markets where the taste and price are always right.
I start with this menu cooked picture last year when I was in US.
Just believe the picture was really at US! All ingredients found at Walmart except the chili in bowl, I bought it from a farmer market.
Come today to re-run a cooking of boiled chicken in fish sauce.
1. Pieces of chicken and ... yeah... as you see the chicken feet and its mixed giblets total of weight is about 2 kgs (1 pound roughly).
2. Cilantro leaves and their root, garlic (2 roots), 2 table spoons of fish-sauce, thin soya sauce and sugar.
3. Big pot being able to hold all above, put in water for half of the pot.
4. Mix everything into pot, turn on your stove and just leave it for about 2 hours (you can see when the water is just dropped by half and it's become a little bit thick). Your cook is ready!
5. Serve with rice and spicy dip (seafood spicy dip recipe was posted on August 23, 2016).
Enjoy until next time.

Spicy seafood sauce
What would you feel when seeing above picture?
We call it "Nam Jim Seafood" or it's a spicy seafood sauce.
My friends who lives in US, when she visit the seafood restaurant down there she always takes this kind of sauce to give her meal more excited.
I have told you at a previous post, chili and garlic as small pieces or as they were cut into small pieces they're even more hot & spicy!
Let's cook it!
1. Simply ingredients, there are bird chili, garlic, syrup, lime juice, fish-sauce and some salt.
Remark : Cilantro root as you see in picture is an option to support more pleasant smell. You can put it or you don't have to.
2. Every Thai kitchen I'm certainly confident that there are the mortar and pestle. They're needed. When I was in US, I found they're sold in Wallmart as well.
- As easiest way to take the garlic shell, just put a whole garlic into mortar and pound them a bit by pestle shell will just come off.
- You now add in the chili, cilantro root into the mortar where the garlic without shell is there.
- Add in about 1 teaspoon salt into, it helps the mixed things in there are not slippery and splashed out while pounding.
- Just pound.
3. Prepare 2 table spoons of syrup, 2 table spoons of fish sauce and lime juice into a bowl. Mix those pounded ingredient into.
4. It's now done! It's perfect to have it with cooked seafood, meatball and steak especially at medium cooked.

How to refresh your cilantro?
Cilantro is one of my favorite vegetable. It gives a pleasure smell and nice taste even when it's fresh in my spicy salad or cooked in soup.
It's always happened, finding out that my cilantro are standing dried inside sometimes outside refrigerator. And here I provide you a simple magic to live them up fresh.
1. Get rid of the yellowish stems and leaves
2. Cut off the root or you don't have to
3. Just put them into a water for 30 minutes... Have a look!
Similar vegetable, same process to live them up.
Very simple. Hope you like it.

Another side dish sauce Thai style "Prik Nam Pra"
Hello everyone,
I would advise you a fresh spicy sauce which is very easy to cook and it gives you much more exciting taste even with just rice and cooked eggs.
We call in Thai "Prik Nam Pra". They are the small pieces of fresh chili added into fish sauce.
You can also add small fresh garlic into to give you even more exciting spicy to taste.
Tips :
1. As small size of fresh chili is, it's more hot.
2. As small size of garlic is, it's more hot.
3. As you chop into small pieces of chili and garlic, it's giving even more and more hot!
Enjoy your spicy meal!

Chilli crushed in oil
The very common spicy paste you always find in Asian restuarants, they're the chilli crush stirred in oil.
This spicy is giving you option how's spicy you would have on your dishes.
Here is my main ingredient, a crushed pepper. Definitely, you can find it quite cheap in Wallmart or similar thing different brand in all asian markets.

Ingredients and how to cook?
2 things together in a bowl
- Crushed pepper & vegetable oil
Ratio between, oil amount is about a little bit over the surface of crushed chilli in bowl.
Are you ready to cook?
It's very easy!!
1. Put the bowl into a microwave, a quick cooked mode for 4 minutes.
2. After 4 minutes, take a bowl off microwave, stir mixed ingredient 2-3 times and place the bowl into microwave again.
3. Set about 4 mintues again, but this time whenever you smell spicy suggest to stop microwaving, check it out no need to wait until time is completed 4 minutes, you chilli crushed paste is ready!
How to use this paste?
I normally have it with rice and side dishes to make my meal spicy excitement.
Or put it into noddle soup, to get spicy my way.
Note : Fried egg with rice, this pepper paste and small amount of fishsauce on top is a fantastic dish.
Enjoy!

Sweet & Sour stirred chicken
Come today after the previous post to tell you how to cook rice, this is a sweet & sour chicken dish you could have with rice.
What we get to have?
Fresh chicken in small pieces: 200 grams
Oil: 2 table spoon
Smash Garlic: 1 tea spoon
Oystersauce: 1 table spoon
Fishsauce: 1 tea spoon
Soysauce:1 tea spoon
Fresh onion : 1 fruit
Fresh bell pepper: 3-4 fruits
Sugar: 1 table spoon
Sweet & Sour sauce: 1 table spoon
* Crush chili: amount based on how's spicy you would have or you can ignore if you don't want to get that spicy!
How to cook?
1. Put on chicken, oil, garlic, oyster/fish & soy sauces into a bowl (cover a bowl with lid to protect the cooking juice get out to spilt microwave). I put on the quick cooked microwave mode for 4-5 minutes or where you can see chicken sound cooked and became juice.
2. Take out the bowl, stir chicken to get well with sauce and put onion, bell pepper, sugar and sweet&sour suace. Place a bolw again into a mircrowave. Again a quick cooked mode but longer time, about 6 minutes in total. (You could take the bowl off microwave to stir and mix the ingredents inside bowl after 1st 3 minutes and put it back into microwave until the cook is well done).
That's all...you now have a 1st Thai dish with rice...congretulations! Enjoy.

...After sometimes to visit Memphis, US now it's time to share my recipe during 12 weeks there. Definitely, it's Thai taste with ingredients taken from my home country and raw food and fresh to combine from Walmart.
Let's have a look some of my recipe, you wouldn't believe that's all cooked in a small room mostly by microwave!
A main dish with most of Thai recipe is "steamed rice" - - I can introduce you here how to cook such a good one.
First you get to prepare props and raw rice (recommend Jusmine rice from Thailand which is easily found at Walmart).
How?
1. You fill 2 cup of raw rice into bowl. Wash rice once time.
2. Put the water into bowl, how much the water - - that's is a good question! My parents would say the same height of your fist mark of your forefinger!
3. Close the bowl as per the usage instruction.
4. Put the blow into a microwave, set a fast cook mode for 15 minutes.
5. After 15 minutes leave the rice to set up for sometimes, let's say 5 minutes.
6. Serve your steamed rice.
Now it's about my time to go sleep (Wednesday 2 March 2016, 22.27) but about early morning there in US, if someone would start your meal with Thai Jusmin cooked rice! Have fun and enjoy your meal.
